Herman Fig Jam

Ingredients

  • 1 pound of fresh,  ripe Herman Produce Figs

  • ¼ cup + 1 tablespoons of red wine

  • ½ cup of water

  • 2 tablespoons + 1 teaspoon of fresh lemon juice

  • 1 strip of zest from the lemon

  • 1 ½ teaspoon vanilla extract

  • 2 tablespoons + 1 teaspoon of organic turbinado sugar

  • 1 teaspoon of ground cardamom

  • 1 stick of cinnamon

  • 1 pinch of ground cloves

Instructions

  • Slice the ‘lids’ off of the Herman figs

  • Add figs and all ingredients into a pot (except for the vanilla extract & lemon juice)

  • Bring all ingredients to a boil

  • Turn down to simmer and allow the  mixture to cook for 45 minutes

  • When the jam has thickened and all figs have broken down, add the ½ teaspoon of vanilla and 1 teaspoon of lemon juice

  • Remove from the heat and allow to cool, then transfer to Mason jars with fitted lids
